I watched a lot of #YouTube videos to find the perfect technique and recipe to create authentic home-made pasta. One user claimed, “I didn’t know I had arthritis until I followed this recipe.” In hindsight, this probably should have prepared me for what I was about to endure, but alas, I bought a carton of eggs, “00” flour and prayed I had enough oil left at home. 2 Cups “00” Flour
5 Egg Yolks
3 Whole Eggs
1 Tablespoon Virgin Olive Oil
Separate egg yolks and whites with a fork.
Combine whole eggs with egg yolks.
Be careful not to whip too much air into this mixture.
Add the oil and continue to combine the egg mixture with the oil.
For safety, authenticity, and because another recipe said so, sift the 2 cups of “00” flour.
Pour sifted flour onto a clean and dry bench top.
Create a well in the middle – larger than you think it needs to be – because you will be pouring your egg and oil mixture in the middle.
Using your fork, start to mix the inside edges of the egg mixture with the walls of the flour well.
Once the eggs mixture is coated in flour (and not spilling everywhere) use your hands to start combining the remaining mixture.
Knead the dough ball for at least 10 minutes. You can do it. This will not get the better of you. Maybe put on a YouTube video to distract yourself. You think you’re done after about 7, but I can assure you, you’re not lol.
Eventually, you can try the spring test, which is lightly pressing your finger into the dough and watching it bounce back.
Cover the dough tightly in cling wrap and leave it on the bench for 30-60 minutes.
Once the dough had rested, cut it into 8 smaller pieces like a pizza, and start to work with a roller your slice of dough. If you have a pasta sheeter, congratulations; you are elite and I am very jealous of you right now!
You want the sheet to be thinner than you think it needs to be. The saying is, “you should be able to read a love letter between the thin sheets of pasta.”
At last, quarter your long sheet of pasta and cut into your desired thickness.
Unravel your pasta strands and dust with flour so they don’t stick to each other.
Once you have sheeted and cut your dough slices, boil your water and add a pinch of salt.
Finally, cook your pasta for 2-3 minutes (or longer depending on your desired pasta texture).
Enjoy the fruits of your labour and mix your pasta with your favourite pasta sauce!
